Classes

All About Fish

Three course class on how to buy, season, and cook fish.

This class focuses on fish from start to finish. There are three courses with sides with cuisines from Mexico, Italy, and here at home.

Courses are Salmon cakes with dill and yogurt sauce with crusted salmon, Beer battered fish with chipotle sauce with grilled street corn, and grilled ahi tuna with mushroom risotto.

Chicken!

Breaking down whole chickens and the endless possibilities.

This class focusses on breaking down whole chickens and using all of the chicken to make things from a stock to using other parts to make show stopping dishes, including juicy breast, rich and meaty thighs and legs.

Homemade Pastas

Learn to make homemade pastas that totally eclipse the pasta in the Italian section of the grocery.

Everything from spaghettis and linguini. To folded and stuffed pasta. What can be used as a filler? What is the exact recipe of pasta with its appropriate use?

I am excited to put this menu out. I wanted to give some insight to the menu that is put together and how this works. All items are thought through and meat and produce is hand selected to go into my dishes. All dishes are prepared in a professional kitchen meeting local government standards. I and my staff are also serve safe certified to ensure that there will be no contaminants. My main priority is to provide you with a dinning out experience at home.

What sets us apart from purchasing already prepared meals from grocery stores is quality of the food. I do not use preservatives in the food. Any thing that can be made in my kitchen is made from scratch. We make out own dressings, breads, and most pastas. Most fruits and veggies are locally sourced from surrounding farmers markets. This ensures the stellar quality and is how I support local businesses.

From the Chef…

Some of the best memories are made in the kitchen
around fresh and colorful ingredients. Whether they are memories of steaming a
stuffed artichoke or creating that divine marinara sauce that you start at ten
in the morning, there is nothing like smelling fresh seasoning’s cooking in a
sauté pan with perfectly ripened bell peppers, onions and a plate full of
seafood ready to be added to a stock pot of simmering roux for a gumbo. No
one gets excited over opening a box of something and adding water and a protein…

I am always having guests over and they know one
thing; there is going to be some good food and a lot of it! This blog is going
to go over some of the techniques that I have picked over the years from
cooking at home as well as cooking in high end Italian restaurants and steak
houses around the country. There is nothing better than to spend the extra time
preparing a meal that your family as well as your guest will love and talk
about for many years to come.
